Penny For Your Thoughts By: Nancy Whitaker
I love food; reading recipes and the kitchen is my haven.
I recently came across a food blog called Heart, Hands and Home. In a section of the blog there was information called Making Mixes 101. This caught my attention because I thought if I could make some of my own mixes, it would save me time and money and I would not have to fight lines at the grocery store.
The one mix that I made just last week was a brownie mix. Now, who doesn’t like brownies? If you make this mix, you can whip up a batch of these delicious sweet treats and have them on the table or in your tummy within a half hour.
Sometimes I don’t keep 10 pounds of sugar or flour in my cupboards, but I had enough simple ingredients to make 6 jars of brownie mix. By making my own mix, I can use ingredients and make them gluten or sugar free. Are you interested in making this mix? Here is the recipe:
First of all, wear an apron because if you are like me, I had flour from one end of the kitchen to the other.
Choose how you want to package your mix. I used mason jars, but you could use zip lock bags also, which stack very well. Make sure you have all of the ingredients. You will need flour, sugar, cocoa, baking powder and salt. (this mix they say can also be used to make Texas Sheet Cake,)
Ingredients:
8 cups of flour
6 cups sugar
2 cups cocoa powder (such as Hersheys)
1 1/2 TBS baking powder
1 TBS salt
Mix together in a big bowl until everything is combined. Using a whisk is good to use. Make sure all of the ingredients are well mixed.
The next step is putting your mix into containers for storage. Since the brownies require 2 1/4 cups of your brownie mix, I measured the correct amount into my jars. Oh they looked so good, I just had to try one.
I MADE BROWNIES
So to my 2 1/4 cups of mix, I added 2 eggs, 1/3 cup of oil, 2 tsp vanilla, and optional ingredients such as nuts or chocolate chips. I mixed well. Batter was thick, but if you want a cakeier brownie, use 3 eggs, instead of 2. Mine were fudgey.
Put some parchment paper lightly greased into a 8×12 square pan. Then pour batter into pan.
Preheat oven to 350 and bake until an inserted fork or toothpick comes out clean,
Oh these look so good. Some family birthdays are coming up soon and maybe I will give them a brownie mix.
I never met a brownie I didn’t like. Coffee or milk with brownies? Frosted or powdered sugar? Let me know and I’ll give you a Penny for your thoughts.
