A big chain of stores no longer with us is one that had flashing blue lights, things in it that made a child’s eyes wide and just plain fun to go to.

One thing I remember is when it was announced in the store that there was going to be a Blue Light Special. If you were lucky enough to be in the store shopping, you would run to that blue light and get a good deal. I know I usually ran with my kids towards that light.

Why Kmart? More than one hundred years ago, Sebastian Spering Kresge opened a modest five-and-dime store in downtown Detroit…and changed the entire landscape of retailing. The store that Kresge built evolved into an empire.

When Kresge opened his first store in 1899, he sold everything for 5 and 10. I sure would have loved to have shopped at that Kresge Store just to see what they had for a nickel or a dime. This venture became Kmart.

At one time there were over 2000 Kmarts in operation and after retail changed Kmart is down to about 4 stores. One just closed in Florida in 2024 but there are a few stores in the Virgin Islands and Guam.

The other night while reminiscing I was asked if I remembered the Kmart Sub. So I looked up the recipe and found this one online:   mmmmm

KMART SUBS

Hoagie rolls

Oscar Meyer Bologna

Oscar Meyer Ham

Oscar Meyer Hard Salami

Kraft American Cheese

Yellow mustard

Thinly sliced yellow onion

Sliced tomato

Sliced dill pickles

Finely shredded iceberg lettuce

*Note – the Oscar Meyer brand hard salami may be hard to find so I substituted the Applegate Farms brand for the sliced ham and Dietz and Watson brand for the salami

DIRECTIONS FOR COPYCAT KMART SUBMARINE SANDWICHES:

Spread mustard on the top of the hoagie roll, cut the meats in half and the cheese in half diagonally. Slice the tomatoes, lettuce and slice the onion as thin as possible, lay ham on bun followed by salami and bologna; then cheese, tomatoes, onions, dill pickles, lettuce on top of pickles. Finally put on top bun…yummy!
